I am trying to find out if I can approve an install for a single workstation
or server. So far it appears I can only aprove installs for groups. Is it
possible to approve an install for a single workstation or server using WSUS
3.0?

Put that single server into its own group, then approve for that group.

In order for that to happen I have to change how computers are assigned and
manually manage the groups, I'm not looking to do that because we have almost
6,000 clients and servers that I am managing with WSUS.

I am looking for something along the lines of being able to click on a
computer and select a patch that is not installed and tell it to install on
that specific computer, or click on a patch and approve that patch only for
the computers I want to install it on.

WSUS approval does not go beyond the group level.
